What Ignited Ember
Whiskey is full of language about distillation, filtration, cask finishes, age statements etc. But nobody walks into a bar thinking, “I want a triple-distilled, non-chill-filtered, 12-year-old, single pot still Irish whiskey today.” You don’t need to know all the technical details to know what you enjoy. We choose what we drink by how we feel, by the mood we’re in. And that’s where Ember started.
As a whiskey lover, Laura was used to being asked what whiskey to choose or what bottle to buy as a gift. People mainly asked about age and price, assuming they were indications of quality. She saw that people were increasingly intimidated by the language around whiskey and afraid of sounding silly when ordering a glass or buying a bottle. Those conversations became part of the thinking behind Ember: a way of choosing whiskey that starts with the person, the mood and the moment.
At Whiskey Live Dublin 2025, surrounded by Irish whiskey, the idea began to take shape. A year later, it came full circle. From the idea, to the liquid, to the brand, to the bottle in your hand, Laura brought Ember to life and launched it at Whiskey Live Dublin 2026.
